The jalapeño's bright flavor and low-medium heat work very well with potato earthiness. And mixed in as a paste, the flavor is consistent with every bite. Remove the pan from the heat and drain. In the same pot add the butter.

  7. Fry the meatballs in a skillet.
  8. Make the mashed potatoes by boiling the potatoes in water when fork tender drain. Add the potatoes back to the pot and add salt, milk, and butter. Whip or beat the eggs till creamy.
  9. Move the meatballs to a plate and set aside.
  10. Dice the jalapeño pepper after you remove the seeds and ribbing.
  11. Add jalapeño and butter to the drippings and sauté till tender.
  12. When tender add the flour and seasonings. Add oil if necessary but cook till flour is like a paste.
  13. Add the beef stock.
  14. Stirring constantly till desired thickness. If too thick add a bit of water. To thin keep cooking till it's thickened.
  15. Add the meatballs to the gravy and gently stir in.

Remove the pan from the heat and drain. In the same pot add the butter. Using a handheld masher, mash the butter into the potatoes. Add enough warm cream until desired smoothness is achieved. Season the potatoes with jalapeno, salt, and pepper to taste.
