This stew was always prepared by my mother and my father's sister (may God rest her soul). Kalderetang Kambing is goat meat stewed in tomato sauce. The meat is sautéed with garlic, onions, and tomatoes then stewed in tomato sauce until it becomes tender.   2. Grind the tomatoes, peppers, tatashe, ginger, garlic and onions. Pour the ground tomato mix into a pot and leave to boil until the consistency is thicker and the excess water has dried up.
  3. Heat up the vegetable oil and, add some diced onions. Add the dried up tomatoes and fry for about 25 minutes or until the tomato loses its sour taste. Stir continuously to prevent burning at the bottom.
  4. Add the goat meat stock, stock cube, salt to taste, immediately add goat meat and cook for 10 minutes. Toss in the spring onions and turn off heat
  5. Serve with rice and plantain.
