Steps to make Healthy Sweet Potatoes with Apples:
  1. Preheat the oven to 350°F for baking.
  2. Dice up the sweet potato into a pile of 1" wedges and throw into a medium bowl. For easy cooking, they shouldn't be more than 1/2" thick.
  3. Peel, core, and dice up the two apples into small 1/2" cubes. Throw into the same bowl with sweet potatoes.
  4. Finely chop the rosemary and thyme together, then finely chop the fresh ginger. Throw all the fresh and dry spices into the same bowl with the main ingredients.
  5. Pour extra virgin olive oil into the bowl and thoroughly mix everything together. Optionally you can throw everything into a large tupperware, cover, and shake well to mix the ingredients.
  6. Spread ingredients onto a large flat pan and bake at 350°F for 45 minutes or until soft.
  7. When done, center on pan, then scoop onto plate, and serve with protein of your choice.
