  1. Take Marinade
  2. Take 1/2-2/3 pound beef

  6. Prepare 1/8 tsp. kosher salt
  7. Get Sauce

  10. Make ready 1/2 cup chicken broth
  11. Make ready 1 1/2 Tbl. Sherry or white wine
  12. Prepare 2 tsp. soy sauce

  14. Take 8 oz. Sugar Snap peas (or snow peas)
  15. Get 3 large scallion (green onion)
  16. Take 3 cloves garlic
  17. Make ready 1 black pepper to taste
  18. Get Rice for serving
Instructions to make Beef and Sugar Snap Peas:
  1. Start rice so it's ready when done
  2. Slice beef into about 1/4 inch strips
  3. Mix beef with marinade, mix and set aside, or like I do, the night before.
  4. Wash peas if required
  5. Slice peas across, about 1/3-1/2 inch, I tip them also
  6. Just set aside for now
  7. Add all sauce ingredients to a small bowl. Mix well then set aside.
  8. Chop garlic cloves. Slice green onions into rings about the same as the peas. Set aside.
  9. Heat a stir-fry/wok/skillet over high heat, add 2 Tbl. Oil. When hot, add beef and marinade.
  10. Stir fry for about 2 minutes, until meat is browned (not cooked), place meat and juices on a plate, set aside.
  11. Add 2 Tbl. oil to pan, when hot, add garlic and green onion. Stir fry 1 minute. Add peas.
  12. Stir fry 1 minute. Stir sauce one last time, add to pan.
  13. When broth comes up to a light boil or simmer, reduce heat to medium, cover, cook for 3 minutes.
  14. Uncover, increase heat to medium high, add beef and juice.
  15. Stir fry for about 3 minutes. Serve over rice.
  16. Garnish options, sesame seeds, sliced green onions, cilantro/parsley
