This authentic Malaysian curry is perfect for dinner and serves well as leftovers for lunch. It is a tasty combination of chicken thighs with the thick curry sauce over potatoes, red bell pepper and snap peas on a base of shallots, garlic and ginger. Put the garlic, chillies, lemon grass, ginger and shallots in a food processor to form a paste. (Or you can use a pestle and mortar). Next, heat the oil in a large heavy-based pan.

  3. Bring to a boil and turn the heat down. Cover the wok with a let to let the liquid absorb into the chicken. Cook for 20 minutes and stir every 3 to 5 minutes. Once the gravy has thicken, the dish is done.

Put the garlic, chillies, lemon grass, ginger and shallots in a food processor to form a paste. (Or you can use a pestle and mortar). Next, heat the oil in a large heavy-based pan. When the oil is hot, sear the chicken, skin side down, until golden. Flip the chicken skin side up and add the coconut milk, chicken stock, cinnamon stick, star anise, and lime leaves. Don't forget to remove the ginger, cinnamon sticks, bay leaves and chili halves from the cooking liquid after removing the chicken.
