  1. First dice mushrooms.
  2. In a large frying pan melt butter and oil. sautee mushrooms and rice for three to five minutes, on medium to high heat.
  3. Add enough chicken stock to cover the rice mixture, and season with garlic powder, salt, and pepper. Stir it until it began to boil. Reduce the heat to low and place a lid on pan and let it simmer.
  4. Every two to three minutes check your rice and stir. As the liquid reduce add more chicken stock. Continue this process for fifteen to twenty minutes, until rice is fully cooked.
  5. Once rice is fully cooked add parmesan cheese mix it in the rice. poor your risotto in a bowl and garnish with parsley, and serve!

Add more hot liquid if necessary to cook. For this mushroom risotto, mushrooms are sautéed first, then cooked in brandy (or vermouth). Arborio (or any other kind of risotto rice) is cooked slowly with stock and when done, you stir in some freshly grated Parmesan cheese. Heat the oil in a large frying pan or wok, and add the onion, garlic and mushrooms. Add the rice and vegetable stock, and turn the heat up to medium-high.
