Risotto is a simple (yet a tiny bit time consuming) dish that tastes good with so many different mix ins and foods. With Thanksgiving right around the corner, I decided to try and perfect a fall risotto recipe I could serve as a side dish on our holiday table. In Italy, this is known as 'risotto alla Milanese,' 'risotto giallo,' or 'risotto allo zafferano.' Whatever you call it, it is the king of risottos, the simplest yet best known of all.

Instructions to make Autum Rissotto:

  2. Finely chop the onion and pumpkin and cook them slowly in a pan with olive oil, salt and black pepper until the onion gets brown
  3. Add the fresh mushrooms finely choped
  4. Drain the rehydrated mushrooms and save the water
  5. Add them to the pan and remove.
  6. After 10 minutes, add the rice and the water you've used to rehydrate the mushrooms
  7. Cook it for 15 minutes. Add the grated parmesan cheese and cook for another 5 minutes while removing constantly

We begin with a special variety of rice (Arborio, Carnaroli, or Vialone Nano) with a starchy outer layer that is especially adept at absorbing sauces. The rice also releases some of its starch into the cooking liquid, giving the dish a velvety texture.

Learn How to Boost Your Mood with Food

Most of us have been trained to think that comfort foods are bad and are to be avoided. At times, if your comfort food is essentially candy or other junk foods, this can be true. Otherwise, comfort foods may be really healthy and good for you. There are some foods that actually can raise your moods when you consume them. If you seem to feel a little bit down and need a happiness pick me up, try a couple of these.

Eggs, you may be astonished to find out, are fantastic at battling depression. You should see to it, though, that what you make includes the egg yolk. The yolk is the part of the egg that is the most crucial in terms of helping you cheer up. Eggs, the yolk particularly, are rich in B vitamins. B vitamins can genuinely help you improve your mood. This is because the B vitamins increase the function of your brain’s neural transmitters (the parts of the brain that affect how you feel). Try eating an egg and be happy!

Put together a trail mixout of a variety of seeds and nuts. Peanuts, cashews, sunflower seeds, almonds, pumpkin seeds, and so on are all great for helping to boost your mood. This is because these nuts are loaded with magnesium, which helps to raise your production of serotonin. Serotonin is the “feel good” chemical substance that directs your brain how you feel at all times. The more you have of it, the happier you will feel. Not only that but nuts, in particular, are a fantastic protein source.

Cold water fish are excellent if you want to feel better. Salmon, herring, tuna fish, mackerel, trout, etc, they’re all high in omega-3 and DHA. These are two substances that boost the quality and function of the grey matter in your brain. It’s the truth: eating tuna fish sandwiches can actually help you battle your depression.

It’s not hard to drive away your bad mood when you eat grains. Quinoa, millet, teff and barley are all actually great for helping boost your happiness levels. These foods can help you feel full for longer as well, helping you feel better. Feeling starved can be awful! The reason these grains elevate your mood is that they are not difficult to digest. These foods are easier to digest than others which helps promote a rise in your sugar levels which in turn takes your mood to a happier place.

Green tea is wonderful for moods. You were simply anticipating to read that in this article, weren’t you? Green tea is high in a certain amino acid known as L-theanine. Studies have found that this amino acid basically induces brain waves. This helps improve your mental focus while calming the rest of your body. You were already aware that that green tea helps you become a lot healthier. Now you are aware that it helps you to raise your moods as well!

See, you don’t need to consume all that junk food when you want to feel better! Try these suggestions instead!
