  1. Bring the stock to a simmer in a pan. Melt the butter and 2 tsp of olive oil in a separate pan and gently fry the onions for 5 minutes. - Add the rice into the pan with the leek and cook for a further minute.
  2. Carefully add a ladel-full or ½ cup of the simmering stock into the pan. CAUTION: If the pan is hot it may generate a lot of steam. Please be careful!
  3. Stir the mixture until all the liquid is absorbed. - Keep adding the stock a bit at a time, always stirring until all the liquid has been absorbed.
  4. Once all the stock has been added the mixture should be creamy and the rice cooked, but slightly firm. - Heat the remaining olive oil in a pan and fry the chicken gently for 5 minutes.
  5. Add in the mushrooms and garlic and fry for a further 1 minute. - Add the chicken mixture to the rice together with the thyme and the parmesan. Season with salt and pepper and mix well and garnish with parmesan cheese before serving.

Make a few trail mix of nuts or seeds. Your mood can be improved by eating peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, and so on. This is possible as these foods are high in magnesium which increases your production of serotonin. Serotonin is the “feel good” chemical substance that directs your brain how you feel at all times. The more of it you have, the more pleasant you are going to feel. Not just that but nuts, particularly, are a great source of protein.

Cold water fish are wonderful for eating if you wish to combat depression. Cold water fish such as tuna, trout and wild salmon are rich in DHA and omega-3 fatty acids. Omega-3 fatty acids and DHA are two things that actually help the grey matter in your brain function a lot better. It’s true: eating a tuna fish sandwich can basically help you fight back depression.

Grains can be good for driving away a bad mood. Quinoa, millet, teff and barley are all really great for helping raise your happiness levels. They fill you up better and that can help improve your moods as well. Feeling famished can be a real downer! The reason these grains are so great for your mood is that they are easy for your stomach to digest. These foods are easier to digest than others which helps jumpstart a rise in your glucose levels which in turn takes your mood to a happier place.

Your mood can actually be helped by green tea. You were simply waiting to read that, weren’t you? Green tea is rich in a certain amino acid referred to as L-theanine. Studies have discovered that this amino acid basically stimulates brain waves. This helps better your mental sharpness while relaxing the rest of your body.
