Steps to make Chicken & mushroom risotto:
  1. Prep your ingredients. You will also need a sharp knife, chopping board, saucepan and a wooden spoon
  2. Finely chop the onions.
  3. Add butter and the onions to the saucepan on a gentle heat. Cook for 10mins until onions are softened.
  4. Slice the mushrooms and add to the cooked onions with thyme. Cook for 5 mins until the mushrooms are softened.
  5. Add the risotto rice and stir. Gradually add 1/4 of the stock at a time, stirring occasionally. And topping up with more stock as it absorbs.
  6. When most of the stock has absorbed and the rice is nearly cooked, add the chicken and stir to warm through.
  7. Season well, adding the parsley & Parmesan.

Serve these chicken thighs with all of the delicious lemon-caper sauce over angel hair pasta. Chicken Tetrazzini combines cooked vermicelli, chicken, and mushrooms with a rich sherry-Parmesan cheese sauce. The mixture is sprinkled with breadcrumbs and Parmesan cheese and baked until bubbly and golden. This is a great way to use leftover cooked chicken. Parmesan is full of flavor, so a little goes a long way.

This is because these nuts are high in magnesium, which helps to boost serotonin production. Serotonin is the “feel good” chemical that directs your brain how you feel day in and day out. The more serotonin in your brain, the happier you’ll feel. Not only that, nuts, particularly, are a fantastic source of protein.

Cold water fish are wonderful for eating if you wish to combat depression. Salmon, herring, tuna, mackerel, trout, and so on, they’re all high in omega-3s and DHA. Omega-3 fatty acids and DHA are two things that promote the quality and the function of your brain’s grey matter. It’s true: consuming a tuna fish sandwich can basically help you fight depression.

Some grains are really great for repelling bad moods. Quinoa, barley, teff, millet, etc are all wonderful for helping you feel better. These grains can help you feel full for longer too, which can help your mood too. Feeling famished can actually make you feel awful! The reason these grains are so great for your mood is that they are not difficult for your body to digest and process. You digest them faster than other things which can help promote your blood sugar levels, which, in turn, helps make you feel more pleasant, mood wise.

Your mood could really be helped by green tea. You just knew green tea had to be mentioned, right? Green tea has a lot of an amino acid referred to as L-theanine. Studies have found that this specific amino acid can actually induce brain waves. This will improve your brain’s concentration while simultaneously relaxing the rest of your body. You were already aware that that green tea helps you feel healthier. And now you are aware that green tea can help improve your mood also!
