Steps to make Green Veg & Pesto Risotto:
  1. Boil the kettle. Dice the onion. Add the oil and onion to a large pan and soften the onion for 5 mins on a low heat. Add a punch of dried mixed herbs and stir.
  2. Add the stock cube to 700ml boiling water and stir to dissolve.
  3. Add the rice to the pan and stir to coat the rice in the oil. Stir until the rice is translucent. (Approx 2-3 mins)
  4. Add a small amount of stock. Stir. Repeat this, slowly adding water and stirring until the rice is cooked (approx 20-30 mins). Keep the pan on a low heat so it absorbs the stock slowly.
  5. Meanwhile, boil your greens (not the peas) for 5-10 mins so they cook but are still crunchy. You can use any greens you have in your fridge. You want approximately 2 large handfuls of greens per person. Once cooked, drain and set to the side.
  6. Once the rice is cooked add the greens, frozen peas, pesto, and black pepper. Stir. The peas heat through really quickly!
  7. Serve into bowls and garnish with Parmesan and pine nuts.

This is possible because these foods have a bunch of magnesium which boosts serotonin production. Serotonin is a feel-good chemical substance that tells the brain how to feel at any given time. The more you have of it, the more pleasant you will feel. Nuts, along with improving your mood, can be a superb source of protein.

Cold water fish are excellent for eating if you want to battle depression. Cold water fish including tuna, trout and wild salmon are rich in DHA and omega-3s. DHA and omega-3s are two things that actually help the grey matter in your brain work a lot better. It’s true: consuming a tuna fish sandwich can earnestly elevate your mood.

Grains can be great for overcoming a bad mood. Quinoa, barley, teff, millet, etc are all great for helping you feel happier. They help you feel full also which can actually help to make your mood better. Feeling starved can truly bring you down! The reason these grains can improve your mood is that they are not hard to digest. You digest these grains more quickly than other things which can help increase your blood sugar levels, which, in turn, helps make you feel happier, mood wise.

Green tea is fantastic for moods. You were sure green tea had to be mentioned, right? Green tea has been found to be chock-full of an amino acid known as L-theanine. Studies have discovered that this amino acid essentially induces brain waves. This will better your brain’s focus while at the same relaxing the rest of your body. You probably already knew it is not hard to become healthy when you consume green tea. Now you are well aware that it helps you to raise your moods also!
