Risotto con Funghi (mushrooms) pairs well with a light appetizer or even with a simple green salad. Serve the risotto with a glass of fine wine like a Chianti from Florence, Tuscany. The wine is very smooth on the palate, and has a rich fruity flavor, and goes perfectly with this Risotto con Funghi(mushrooms). A rich and creamy risotto that is flavoured with a mixture of fresh mushrooms and dried porcini, seasoned with Parmigiano Reggiano.

Instructions to make Risotto al funghi:
  1. In a pan sauté the onions with extra virgin olive oil until it became translucent then add the alborio rice and stir it for like 5 minutes. Splash 1/2 cup of white wine and let it evaporate.
  2. On the other pan sauté the mushroom with a little bit of olive oil for 5 minutes and simmer the chicken broth at another pan.
  3. While stirring the rice, the simmering broth must be added in the rice little by little until it is absorbed. Repeat the steps, ladle by ladle with the broth until you reach the right texture and consistency of a creamy risotto. (Patience makes an exceptional dish 😉) (Total stirring time is about 20 min) keep the same in a low fire.
  4. Add the mushroom, parmesan and parsely
  5. Serve with additional parmesan on top.

This is possible as these foods are high in magnesium which increases your production of serotonin. Serotonin is a feel-good chemical substance that dictates to the brain how to feel at any given time. The more of this chemical in your brain, the happier you’ll feel. Not only that, nuts, particularly, are a fantastic protein food source.

Cold water fish are excellent for eating if you wish to fight depression. Wild salmon, herring, mackerel, trout, and tuna are all high in omega-3 fats and DHA. DHA and omega-3s are two things that really help the grey matter in your brain function a lot better. It’s true: eating a tuna fish sandwich can earnestly elevate your mood.

It’s not difficult to overcome your bad mood when you consume grains. Quinoa, barley, teff, millet, etc are all excellent for helping you feel better. They help you feel full too which can actually help to better your mood. It’s not hard to feel a little bit off when you feel famished! The reason these grains are so great for your mood is that they are not hard to digest. You digest these foods faster than other things which can help boost your blood sugar levels, which, in turn, helps make you feel more pleasant, mood wise.

Your mood can truly be helped by green tea. You were sure green tea had to be mentioned, right? Green tea is high in a specific amino acid referred to as L-theanine. Research has proven that this amino acid promotes the production of brain waves. This will better your brain’s concentration while at the same relaxing the rest of your body. You probably already knew it is not hard to get healthy when you consume green tea. Now you know that applies to your mood too!
