Steps to make Imperial Rice:
  1. Imperial rice, or arroz imperial is a staple in the Cuban American community. It is frequently served at South Florida parties and other events. This recipe is for a small portion to serve at home, but can be scaled up to serve larger groups.
  2. In a slow cooker, add 1/2 diced onion, 3 minced garlic cloves, and the chicken thighs. Add water to cover the ingredients. Cook on low heat for 8 hours or until chicken is tender.
  3. Remove chicken from slow cooker and shred with fork. Discard bones, retain the broth. Set aside.
  4. Prepare saffron rice according to package instructions, substituting the broth from the slow cooker for the water, using the specified amount. Alternatively, you can prepare saffron rice from scratch, but using the packaged mix saves time.
  5. Optional: Many people will add mayonnaise to the cooked rice before putting it into the casserole dish. I don't, but I am including this step for those who are so inclined.
  6. Preheat oven to 350°F
  7. In a large skillet, add olive oil and turn on low heat. Add green pepper and onion. When onions start to become translucent, add salt, pepper, oregano and garlic. Saute for 2-3 minutes, then add shredded chicken and lime juice. Saute 2-3 minutes more.
  8. Add cooking wine and tomato paste. Blend with other ingredients. Raise heat and cook until liquids reduce. Remove from heat.
  9. In a casserole dish, add cooked rice. Layer the chicken over the rice. Top with mozzarella cheese.
  10. Bake for 30 minutes or until cheese is melted and beginning to brown.
  11. Garnish and serve. I prefer parsley, but pimento slices or stuffed olives are more commonly used.

Discover How to Boost Your Mood with Food

For the most part, people have been taught to think that “comfort” foods are bad for the body and must be avoided. At times, if your comfort food is made of candy or other junk foods, this is true. Other times, comfort foods can be utterly healthy and good for us to eat. Some foods actually do elevate your mood when you eat them. When you feel a little down and need an emotional boost, test out some of these.

Eggs, believe it or not, are great for helping you battle depression. Just make sure that you do not throw away the egg yolk. The yolk is the part of the egg that matters most in terms of helping elevate your mood. Eggs, the egg yolk in particular, are stuffed full of B vitamins. B vitamins can truly help you raise your mood. This is because the B vitamins help your neural transmitters–the parts of your brain that dictate your mood–run better. Eat an egg and feel happier!

Put together a trail mixout of various seeds and nuts. Your mood can be raised by consuming peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, and other types of nuts. This is possible because these foods are high in magnesium which promotes your production of serotonin. Serotonin is the “feel good” natural substance that dictates to your brain how you feel all the time. The more serotonin you have, the more pleasant you are going to feel. Nuts, along with elevating your mood, can be a superb source of protein.

Cold water fish are great for eating if you wish to battle depression. Cold water fish including tuna, trout and wild salmon are high in DHA and omega-3 fatty acids. Omega-3 fatty acids and DHA are two things that really help the grey matter in your brain work a lot better. It’s true: consuming a tuna fish sandwich can actually help you fight back depression.

It’s not difficult to overcome your bad mood when you eat grains. Quinoa, millet, teff and barley are all actually wonderful for helping raise your happiness levels. These grains can help you feel full for longer also, which is a mood improver. It’s not difficult to feel low when you are starving! The reason these grains can improve your mood is that they are not difficult for your stomach to digest. You digest these grains more quickly than other foods which can help promote your blood sugar levels, which, in turn, helps make you feel more pleasant, mood wise.

Your mood could truly be helped by green tea. You were just expecting to read that here, weren’t you? Green tea has a lot of an amino acid known as L-theanine. Studies have found that this particular amino acid can essentially induce brain waves. This helps focus your mental energy while simultaneously making the rest of your body more relaxed. You already knew that green tea helps you feel a lot healthier. Now you are well aware that green tea helps you to lift your moods too!

So you see, you don’t need to consume all that junk food when you wish to feel better! Try a couple of of these tips instead.
