Instructions to make Hefezopf (German Bread):
  1. [If using a bread machine] Combine all the ingredients (except for the garnishing and glazing ingredients) in the bread making machine. Select the dough setting and press start. When the dough is done, skip to Step 6.
  2. [If kneading by hand] In a bowl, combine warmed up milk and the ingredients marked with ◆. Mix until the yeast dissolves completely. Add the lemon zest and the eggs, then set aside.
  3. Place the flour in a separate bowl and pour in the mixture from Step 2. Knead it for 5 minutes.
  4. Add the butter and salt. Continue kneading about another 10 minutes. It might be tough to knead, but be patient and keep kneading.
  5. [First proof] This dough is quite soft, but once the dough comes together, allow it to rise for 40-50 minutes. Cover it with tightly wrung out damp cloth to prevent it from drying up.
  6. [Check with your finger] When the dough rises up to about twice the size that it was originally, dust your finger with flour and push it down to make a hole. If the dough stays down like a belly button, it is done rising.
  7. Dust the working surface with flour for easier handling.
  8. In this recipe, we are going to make a braid with 6 strands, so divide the dough into 6 parts and roll it out to 40-45 cm long. Start braiding.
  9. Secure the beginning and the end of the braid tightly.
  10. Place the dough onto a cookie sheet, cover it with a tightly wrung out damp cloth and allow it to rise for the second time. It will take about 30 minutes and the dough should be 1.5-2 times bigger than its original size.
  11. It should look like this after the second rising. Preheat the oven to 200℃.
  12. Glaze the dough with the beaten egg.
  13. Decorate the dough with a plenty of almond slices and nib sugar.
  14. Bake for 15 minutes at 200℃. Reduce the oven temperature to 180℃ and bake for another 15-20 minutes. Adjust the time if necessary.
  15. This is the cross section of the bread. It is tasty as it is, but it is normally eaten by spreading on some butter and jam.
  16. I made 2 smaller loaves with the same amount of the ingredients above. The left loaf has some cranberries in it. At Step 7, divide the dough into half and add 30 g of cranberries into one.
  17. Here is a 6-strand braid.
  18. [Chocolate and orange zopf] Substitute 20 g of flour with 20 g of coco powder. Use orange zest instead of lemon zest. Also substitute a part of soy milk with some squeezed orange juice. Bake it the same way.

Turn to Food to Improve Your Mood

Many of us think that comfort foods are bad for us and that we need to keep away from them. However, if your comfort food is candy or junk food this is true. At times, comfort foods can be utterly nutritious and good for us to consume. Several foods actually do improve your mood when you consume them. If you seem to feel a little bit down and you need a happiness pick me up, try a few of these.

Eggs, believe it or not, are terrific for helping you battle depression. You must make sure, though, that what you make includes the yolk. The egg yolk is the most crucial part of the egg iwhen it comes to helping elevate your mood. Eggs, the yolks especially, are loaded with B vitamins. The B vitamin family can be fantastic for boosting your mood. This is because the B vitamins help your neural transmitters–the parts of your brain that dictate your mood–function better. Try eating an egg and cheer up!

Make a trail mixout of various seeds and nuts. Peanuts, cashews, sunflower seeds, almonds, pumpkin seeds, etcetera are all great for helping to boost your mood. This is because seeds and nuts have plenty of magnesium which increases your brain’s serotonin levels. Serotonin is the “feel good” chemical substance that directs your brain how you feel all the time. The more serotonin you have, the better you will feel. Not only that, nuts, specifically, are a terrific protein food source.

Cold water fish are excellent if you would like to be in a better mood. Herring, trout, tuna, wild salmon, and mackerel are all rich in omega-3 fatty acids and DHA. DHA and omega-3s are two things that improve the quality and the function of your brain’s gray matter. It’s the truth: consuming tuna fish sandwiches can really help you fight your depression.

Some grains are truly wonderful for fighting off bad moods. Teff, barley, millet, quinoa, etc are all wonderful for helping you be in a happier state of mind. They help you feel full as well which can really help to make your mood better. It’s not hard to feel a little bit off when you are starving! The reason these grains can improve your mood is that they are easy for your body to digest. You digest these foods quicker than other things which can help boost your blood sugar levels, which, in turn, helps make you feel happier, mood wise.

Green tea is fantastic for moods. You knew green tea had to be mentioned, right? Green tea is loaded with an amino acid known as L-theanine. Research has proven that this amino acid promotes the production of brain waves. This will better your brain’s concentration while also calming the rest of your body. You knew green tea could help you become better. Now you know that green tea can elevate your mood too!

So you see, you don’t need to consume all that junk food when you wish to feel better! Try a few of these tips instead.
