  2. Heat water to a boil and add kanten. Stir frequently for 2 mins and reduce heat.
  3. Add sugar to dissolve.
  4. Add koshi-an and brown rice syrup. Simmer on high. Continue to stir until the sauce thickens and you can see the bottom of the pan between stirring.
  5. Turn off heat and add persimmon pulp. Stir well to combine.
  6. Pour into a flat mold, more than 1" deep. I used a very small bread pan and a funnel.
  7. Pop any bubbles on the surface with a toothpick. Let cool at room temperature for 2 hours without touching it.
  8. You can put it in the fridge until it is completely firm. Slice and serve a portion with green tea!

Serotonin is the “feel good” natural substance that dictates to your brain how you feel day in and day out. The more of it in your brain, the better you’ll feel. Not only that, nuts, particularly, are a terrific protein source.

Cold water fish are great if you would like to be in a better mood. Salmon, herring, tuna fish, mackerel, trout, etc, they’re all high in omega-3 fatty acids and DHA. Omega-3 fatty acids and DHA are two things that raise the quality and the function of your brain’s grey matter. It’s the truth: consuming tuna fish sandwiches can really help you battle your depression.

Grains can be wonderful for overcoming a terrible mood. Quinoa, millet, teff and barley are all really great for helping increase your happiness levels. They fill you up better and that can help you with your moods also. It’s easy to feel a little bit off when you feel hungry! The reason these grains are so good for your mood is that they are easy to digest. These foods are easier to digest than others which helps kick start a rise in your sugar levels which in turn brings up your mood to a happier place.

Your mood can truly be helped by green tea. You were simply expecting to read that, weren’t you? Green tea is rich in a particular amino acid called L-theanine. Studies have shown that this amino acid actually induces brain waves. This will improve your brain’s focus while at the same loosening up the rest of your body. You likely already knew it is not hard to get healthy when you drink green tea. Now you know that green tea helps you to elevate your moods also!
