The ingredients needed to make Dum Arbi Masala:
  1. Prepare 250 gms Taro roots / Arbi
  2. Take 2 big Tomatoes pureed
  3. Prepare 2 big onions, chopped
  4. Make ready 2 Green chillies, chopped
  5. Take 1.5 tsp Ginger chopped
  6. Get 1.25 cup Dahi
  7. Prepare 1.5 tbsp Gram flour
  8. Take 2 tsp Kashmiri Chili Powder
  9. Make ready 2 tsp Coriander Powder
  10. Take 1/2 tsp Turmeric Powder
  11. Get 1.5 tsp Kasuri Methi crushed
  12. Make ready 1/3 tsp Garam Masala Powder
  13. Get To Taste Salt
  14. Get As required Mustard oil to fry
  15. Prepare As required Fresh Coriander
  16. Prepare as required Khade Garam masala
Instructions to make Dum Arbi Masala:
  1. Boil or steam arbi till 80 %done, don't overcook. Peel the boiled arbi and prick it in art few places with a fork. Heat mustard oil in a deep wide pan and deep fry at medium temperature or you can also shallow fry it till it becomes nice golden in color. Add few masalas.
  2. Chop tomato roughly and make a smooth puree with green chili and ginger. Heat oil in a heavy bottom pan and add cumin and the whole garam masala. Now add the gram masala and roast on medium flame till it becomes golden in color. Add onion tomato puree and the powdered masala.
  3. Kashmiri chili, turmeric, salt, and coriander powder and saute till tomato become soft and start releasing the oil from the sides. - whisk the yogurt and then add in the pan and saute again till it starts releasing the oil.
  4. Now add crushed Kasuri methi and 1.25 cup water and when water starts boiling add the fried arbi pieces. Stir to mix and cover th pan with a lid and simmer for 10 minutes. Now The gravy will thicken and the arbi will absorb the flavors. (if you want more gravy then can add some extra water) Add some fresh coriander to garnish and serve hot.
