The ingredients needed to make Aloo Vadi or Patra:
  1. Prepare 3-4 Yam/Arbi (taro root)leaves (medium size)
  2. Take 1 cup besan/gram flour
  3. Make ready 1/4 cup Tamarind pulp
  4. Take 1/4 cup Jaggery
  5. Prepare 1 tsp turmeric powder
  6. Take 1 tsp coriander powder
  7. Make ready 1 tsp red chilli powder
  8. Make ready to taste salt
  9. Take 2 tsp Curry leaves
  10. Get As needed Oil for frying
  11. Get 1 tsp Mustard seeds
  12. Prepare 1 dried red chilli
Steps to make Aloo Vadi or Patra:
  1. Firstly wash the leaves and wipe them off nicely. Now remove it's thick steam and try to peel/shave it's thin veins too
  2. Now in a bowl take all the ingredients except the leaves and mix them well to form a thick paste..
  3. Now take a leaf and place the backside facing towards you and the two-sided vertex part of the leaf, facing upwards. Now put 2 tbsp of the paste over the leaf and apply all around the leaf, coating it completely as shown in the image.
  4. Put the second leaf in the opposite direction I.e. single side vertex facing upwards as in pic 1 Now apply the second coat too in the same manner.
  5. Now place the third leaf again in the opposite direction to the second and coat the third one in the same manner, as shown in pic 2. You can do the same repitation max with 4 to 5 leaves.
  6. Now seal the edges as shown in the first pic applying some more paste over it and roll it from the upward direction as shown in the image. Now tie it with a thread.
  7. Now steam it for 30 mins. till the leaves turns black, which means that it's done completely.
  8. Now cut them with a knife, keeping half inch thickness. Now shallow-fry them untill crisp.
  9. For tadka, in the same kadai, add 1 tbsp of oil, add some mustard seeds, dried green chilli, let them splutter a bit & pour the tadka over the alu-vadis and serve them hot with the chutney of your choice..
